The Barbossi's olive grove
An emblematic tree of Provence for thousands of years, the olive tree has naturally found its place on the lands of Domaine de Barbossi. The centuries-old olive grove produces an extra virgin olive oil that reflects all the typical characteristics of this unique variety from the Alpes-Maritimes: Le Cailletier.
The olives are harvested between November and December, at different stages of ripeness, from ‘turning’ to ‘ripe’, which will reveal the personality of the oil (fruity green or fruity ripe). The Domaine de Barbossi extra-virgin oil is sorted by hand before pressing.
Essentially made from Cailletier grapes, Domaine de Barbossi olive oil reveals scents of broom, notes of sweet almonds, and a vegetal character reminiscent of artichoke and rocket, thanks to a magnificent ardency that leaves a rare persistence.
The marvellous balance of bitterness makes this a highly precise oil that should be used as a seasoning in its own right. It stands on its own…
